Happy New Year!

This post is three weeks late. Sadly, this blog has become a casualty of working full time.
Free time priorities have changed, so the blog has been pushed way down the list. At least it still gets updated! I gave up writing for The Columbian months ago.

On January 2, 2015. Omid, Ward & Jeff decided to roast another pig.



I was scheduled to go back to work on the 2nd, but took the day off.
I texted this photo to my team and told them this was how I spending my day. ☺
Because it was so cold outside, the pig took 12 hours to cook. We were all starving by the time it was finished. It was tasty!!
This little piggy tasted soooo goooood!!

Everyone went home with roast suckling pig, and I even took some in for my team.

The next day, Omid, Matty, Alysa and I attended the UP vs. Gonzaga basketball game. My boss graciously gave us four tickets to the game AND four passes to the Pilot Club!


We got to mingle with the UP Adminisration (Omid even met the President of UP!), and eat lots of good food. There was even a full bar for the 21 & over crowd.

Though we were rooting for UP, Gonzaga won. The Gonzaga players were just amazing to watch! At the time of this game, they were ranked #6, this week they are ranked #3!

Pig Roast 2013

We had our 2nd annual pig roast this past Saturday. The weather was a perfect 79*, 65 people were invited, 63 guests came. It was a huge success and we want to thank everyone for coming! Here are some photo highlights of the day.

The pig was on the rotisseries for 9 hours!
We had a surprise for the guests after everyone was done eating. A belly dancer! I passed out dollar bills to the guests & told them we would be playing a game. I didn't know how else to explain why I was passing out money, as I didn't want to give away the surprise. If you are ever in need of a belly dancer, contact Zahara! She did an amazing job! It was so much fun to watch her dance & to see the guests' reactions as well.

A Time for Swine!

Omid, Ward & Jeff decided it was time for another 'meat roasting' party. This time they chose to roast pig. Omid brilliantly chose last Saturday for our pig roast. 90* outside, gorgeous blue skies with just a few clouds...he couldn't have chosen a better day!! We had invited so many people that we had to supplement the meal with ribs & brisket too.  Oh my, what a party! So. Much. Fun.

 The pig was frozen when it was delivered. Omid slowly thawed the beast in an onion bath.

Omid's first brisket. It was pefect!!

Omid put the brisket on the smoker at midnight & let it smoke until 3 p.m. the next day. He then wrapped it in foil so it would sweat for a few hours, then served it up with the ribs & pig. There were only four slices of brisket left after dinner was over. I think it was everyone's favorite!☺

The menfolk made a top secret pig rub. The only
ingredient I am allowed to share with you is: 2 tsp Chinese 5 spice.☺


Several quartered onions were sewn up inside the chest cavity. Flavor, baby!

DINNER!
We had so much food! It was really a delicious evening. The real fun started after Ward brought his pick up truck around back to where the canopies stood & started blasting his stereo. We started out with country music, then Ward changed it to the 80s station (yay!!!) & the dance floor was hopping! We had a huge 80s sing-a-long/air guitar fest going on for quite a while. Many thanks to our neighbors who let the music blare on until almost midnite!
