Senior-Mother Tea & a Recipe Too!

Today marked the countdown for Matty's upcoming HS graduation. It was the Senior-Mother Tea. It was a super fun event and so wonderful to see all the kids & their moms today. I still remember so many of  these 17 & 18 year olds as Kindergarteners! Time flies!!!!!

Not so fun fact: I rode in with Matty to school today. On the way, I had a sneezing fit and actually tweaked my back. Thank the Lord for muscle relaxers & tens machines!

After resting my back, I baked these yummy monster cookie bars. So easy & so delish! They are not 'clean' so I will pay for eating these later.

Easy Monster Cookie Bars via Better Homes & Gardens
1 16.5 oz roll refrigerated peanut butter cookie dough
3/4 cup rolled oats
1 cup M&M's candy
1/2 cup chocolate chips
1/2 cup chopped peanuts

Preheat oven to 350*. Line a 9x13 pan with foil & grease lightly. Break up cookie dough into a large bowl. Add oats, M&Ms, chocolate chips & peanuts. Mix well.
Pat the dough into the prepared pan. Bake for 20 minutes or until golden brown. Cool in pan and cut into bars. Enjoy!

Colorful Coleslaw!
 
 

This coleslaw salad is so beautiful, not to mention delicious, I never want to make boring old-fashioned coleslaw ever again. Just look at that color!

This recipe Omid made up on the spot, so proportions are not exact.

Colorful Coleslaw

1/2 head purple cabbage, shredded
1/2 head green cabbage, shredded
1 red pepper, julienned
3 green onions, julienned
1/2 cup mayonnaise
1/4 cup lemon juice
1 tsp smoky paprika
salt & pepper to taste

Toss salad with dressing & serve!

UP Update!

 
Time for an update on my new position at the University of Portland!
 
I was a bit nervous, as I left such a loving work environment at the Camas School District. The honest truth is I went from one family to another! 
 
First day selfie!

There are approximately 100 employees in the Physical Plant department that I work in. Everyone has been very friendly and patient while I learn the ropes & the culture.  My two favorite people in the PP department are Sandy & Fay. Wonderful, patient and just all around lovely ladies! I am so grateful that they are the ones training me.
Fay even brought in Thai iced teas for everyone!
 
So far, so good! I am happy that the transition from Camas has been a positive one.☺

Saying Goodbye...

Yesterday I said goodbye to my Special Services family.
 


They were kind enough to throw a farewell brunch for me. I love that they support me in my decision to leave and there are no hard feelings. Just heart-felt well wishes.
Just look at the fun we have!☺

I love you all and will miss you very much!!!

After the prom parent get-together on Saturday, we took Daniel to the local brewery in Washougal, Amnesia Brewing.

Omid wanted to take Daniel to Pine State Biscuits for breakfast on Sunday. Fact: No trip to Portland is complete without a visit!  We went on Easter Sunday too. Check out the last photo.
 
Omid and I always order the Moneyball, but this time we both decided to try something new. I got the Wedgie. Oh my gosh! It was sooooooo gooooooood! Omid & Daniel ordered the Reggie Deluxe. We have new favorites!
 
Did you know...the Mr. T. stickers have made their way over the river into Vancouver? Love it!

Yesterday, Omid and I decided to get out of town. We drove down to Netarts, Oregon for fresh oysters, then drove up Highway 101. Even though the weather was wet & windy, we had a lot of fun.☺
