Here are two of my favorites:
Homemade energy bars (think Larabars). These are so tasty and very easy to make! I toasted the almonds before hand and also added 1/4 cup of dark chocolate chips, a pinch of cinnamon & 2 Tbs of old fashioned (not quick) oatmeal.
After sitting in the fridge for 24 hours, they were even more delicious and reminded me of a thick & fudgy brownie. I took some samples in to work and they received 2 thumbs up!

I double the recipe and just made a few changes. The recipe called for grating the raw sweet potato. That is very labor intensive, so I bake the sweet potatoes first, then add the mash. I also chop the onions instead of grating them. It just saves time and they still taste exactly the same as the first time I made them.
