Broccoli Soup with Lemon-Chive Cream
This is seriously good stuff! I have been eating copious amounts of broccoli for the past month. Like three Costco sized bags in the last three weeks alone. My son hates the smell of broccoli roasting in the oven (my preferred method of imbibing the veg) and asked me to stop. So I decided to make broccoli soup instead.
My normal recipe calls for roasting the broccoli, making a roux & adding either cheddar or Cougar Gold cheese (guess which cheese I add?). This recipe is much better for you because there is no roux & only a tiny amount of parmesan cheese.
