If you are like me, you think about what to serve for dinner after 5 p.m. Yesterday, I spent most of the afternoon baking Barky Bits. My back was stiff from standing & my thumb & index finger were sore from the teeny tiny cookie cutters. I needed a quick & easy recipe for dinner. I finally gave dinner a thought around 7:00 p.m.
Dinner for us most nights consists of a rice dish or a pasta dish with some kind of red meat. We are addicted to that routine. Omid wasn't home to cook for us (fishing trip), so Nas & I had to fend for ourselves. We decided on Ravioli with Basalmic Brown Butter. This is quick, easy & very delicious. It took no time at all & we ate it while watching Doubt. Meryl Streep should just win every Academy Award offered every year. She is just brilliant!
Ravioli with Basalmic Brown Butter
1 package frozen ravioli (I used ravioli with Italian sausage inside)
6 Tbs butter
2 Tbs basalmic vinegar
1/2 tsp salt
1/4 tsp pepper
1/3 c toasted walnuts (chopped)
1/4 c grated parmesan
Bring a pot of salted water to a boil over high heat. Add the ravioli & cook 4-5 minutes (or until they all float to the top). Drain & set aside. In the same pot, cook the butter over medium heat, stirring occasionally. When the foam subsides & the butter begins to turn a golden brown, turn off the heat. Let it cook for one minute. Stir in the basalmic vinegar, salt & pepper. Add the ravioli & stir it around in the sauce. Transfer all to a dish & sprinkle with walnuts & parmesan. Serve immediately.
**NOTE! When adding the basalmic vinegar, make sure your face isn't over the pan - your sinuses will take a beating!
