Make This!!

"Egg"cellent breakfast cups!

These are fun to make AND eat! I found this recipe in The Oregonian FoodDay about 7 seven years ago.


Just grease 6 muffin cups, line with a slice of ham.


Break an egg into each ham slice. Sprinkle with salt & pepper.
I also added some sliced green onion.
Instead of salt & pepper, I used Johnny's Salad Elegance.
I hardly ever use it for salads, but I do use it on everything else!

Bake for 15 minutes at 400*. During the last minute, place a small square of cheese on top of the egg.
YUM! Found these at QFC last night. They are absolutely wonderful!
Serve with an English muffin & enjoy!

6 slice gruyere cheese (or any cheese will do!)
6 slices country ham
6 eggs
Salt & pepper

Preheat oven to 400*. Spray muffin tin with cooking spray. Cut cheese into shapes & set aside. Line muffin tin with ham & press lightly. Ends will stick up over the edges. Crack an egg into each slice of ham. Season with salt & pepper. Bake 15 minutes or until whites are no longer runny. During the last minute of cooking, top with cheese. When melted, gently lift muffins from tin. Enjoy!
