Chili-Rice Skillet Dinner
1/2 lb ground beef
2 T butter
1/2 c chopped onions
1/2 c uncooked rice
1 can diced tomatoes with sauce
1 can black beans or kidney beans
1 tsp salt
1 tsp pepper
1 tsp sugar
1/2 t chili powder
1/2 c water
Brown first 3 items for 5 mins and stir in rest of ingredients. Cover and cook on low heat for 25 mins.
This recipe is super easy. I usually make it with leftover roasted chicken and add half a package of taco seasoning (instead of chili powder). If you add the taco seasoning, you need less salt. Serve with tortilla chips or tortillas with lots of sour cream.
