Thanks to Mike for checking my high school German. Some things are just sehr gut. Chocolate & peanut butter, chips & salsa, bagels & cream cheese, etc. Here is my favorite pairing (besides wine & cheese!): white chocolate & cranberries. I love them together! Whenever I make the white chocolate popcorn (have you made that yet, Sarah?), I always add cranberries. Their beautiful red color is so festive. Today I made my favorite oatmeal cookies. I added white chocolate & cranberries to the mixture. But...I went out on a limb and dared to add Ocean Spray "orange" flavored cranberries. These cookies are so tasty - even Nas ate two! She normally stays away from oatmeal cookies as they look 'healthy.'
Here's the recipe for those of you who may dare to try it! Susan never added cranberries or white chocolate - those are my own additions.
Susan Nelson's Oatmeal Cookies
1 cup butter flavored Crisco
1 cup brown sugar
1 cup white sugar
2 eggs
1 tsp. baking soda
1 tsp. vanilla
pinch salt
2 cups flour
3 cups oatmeal (Old fashioned - not quick oats)
1 tsp. cinnamon
1 1/4 cups cranberries
1 1/4 cups white chocolate chips
Cream Crisco & sugars. Add eggs. Add soda, vanilla, cinnamon, salt & flour. Add oatmeal. Add cranberries & white chocolate. Roll up in wax paper & freeze for two hours. Slice & place on ungreased baking sheet. Bake at 375* for 8-10 minutes. Enjoy! *If they are still very full & fluffy after 9 minutes of baking, I take a cookie spatula and smash them down flat for the last minute of baking.
