Applesauce Muffins

I made applesauce mufins for breakfast this morning (had the extra time with the 2 hr late start). These muffins are so tasty. The recipe makes a big batch and the mix keeps in the fridge up to 4 weeks.

Applesauce Muffins

1 cup butter
2 c sugar
2 eggs
4 c flour
2 c applesauce
3 t cinnamon
2 t baking soda
1 t allspice
1/2 t salt

Cream butter & sugar. Add eggs. Add flour, spices and applesauce. Pour into muffin tin and bake at 400* for 15-20 mins. Batter will keep in fridge for 4 weeks.

Snow there too? We're supposed to get 2" before the rain comes to wash it all away. Good luck to Nas tonite! We will be praying for her!
