Warm Sunshine!

It has been a wonderful warm & sunshiney day here. Our high was 75* and we loved every minute of it. After we finished cleaning house, Omid washed & waxed both cars (thanks honey!). Remy & I sat in the sun most of the day. I officially have my first sunburn of the year (complete with watch band & flip flop marks). Yay! I thawed a bunch of blueberries the kids & I picked last summer to use in dessert tonight (cobbler). In honor of this warm sunshine, I am feeling extremely generous and am in the mood to share one of my favorite recipes. Up until now, I have only shared this recipe with a privileged few (& they were sworn to secrecy).

The recipe is for blueberry cobbler with cookie dough topping. I found this recipe in the summer of 1989. B was visiting Omid & I in Pullman. We were all at the laundromat reading magazines. I came upon a Gourmet magazine and found this recipe. Having no pen or paper, I tore the recipe from the magazine and stuck it in my pocket. B & I made the cobbler the next day. I haven't used a different cobbler recipe since. I have used other fruit and everything pairs well with the crust.

Blueberry Cobbler with Cookie-Dough Topping

Filling
4 cups fresh or frozen blueberries
5 T. sugar
3/4 cup orange juice

Cookie-Dough Topping
1 cup of flour
1/2 t. baking powder
1/8 t. salt
1/2 butter, softened (don't use margarine - YUCK!)
1 cup sugar
1 egg
1/2 t. real vanilla

Mix all the filling ingredients in a greased 9 X 13 pan; set aside.

Topping: Mix first 3 ingredients in a small bowl; set aside. Mix butter & sugar until well blended. Stir in egg & vanilla, then stir in flour mixture. Drop by tablespoons on top of blueberry filling. Heat oven to 375* and bake until golden brown (35-40 minutes). Serve with vanilla ice cream.
**You can use blackberries, nectarines, cherries or apples too.

I am bound and determined to make that cobbler. Sounds like a dream come true!!!! And - yes... you can come to Italy w/us... it will cut down on our expenses!
